Simple Dishes, Great Ingredients

This is the first of what we hope will be many fun and interactive blog posts here at The Wright Connection! My name is Chris. I founded Wright Choice Gourmet in 2001 and I will be one of the main contributors to this blog.

You'll also be hearing from other members of the WCG team to give you a fresh perspective from time to time. Let's get started.

One of my favorite things to do is to entertain friends and family in my home. However, being in the food business can sometimes make my guests uncomfortable. They always think that what I am making is going to be really involved or use techniques they would never be able to duplicate. Trust me, this is not the case! I just use great ingredients when making simple dishes. Over the next few posts, I hope I can show you how having the right ingredients can transform even the most average dishes into family favorites.

Take homemade Mac & Cheese for example: My mom has a great recipe that I have used for years and shared with my friends to great reviews. Recently, though, I have “doctored” this recipe by using a better quality pasta and artisan cheeses like Parmesan Reggiano and Asiago. Try this recipe for yourself and win fans among your friends and family!

Homemade Mac & Cheese

2 Tbsp Butter (melted)

2 Tbsp All purpose flour

2 Cups Milk

2 1/2 Cups Cheese (cheddar, parmesan reggiano or asiago)

2 Cups Macaroni or other short cut pasta

Preheat oven to 350. In saucepan, melt butter and stir in flour and milk.

Cook until the sauce thickens to a béchamel consistency and add 2 Cups cheese. Stir until melted, remove from heat and set aside.

Cook pasta according to package directions. Grease 9x9 or 13x9 pan. Add pasta and cheese sauce, stirring well. Top with remaining cheese and bake approximately 30 minutes or until bubbly throughout.

Okay, I know what you're thinking: Anyone can make Mac & Cheese, right? Well, what about something more complex, like the perfect brisket? Now, how about making that brisket…while you sleep? Really! In your oven while you sleep, and with only three ingredients!!

All it takes is one small trimmed brisket, an oven roasting bag and your favorite sauce. Here’s where the great ingredients come into play. You could use a national brand barbecue sauce, but that would just be ho-hum. I prefer Blackberry Chipotle Oven & Grill Sauce from Robert Rothschild Farm. It is the perfect sauce for making YOU a great chef.

Overnight Brisket

1 Small Trimmed Brisket

1 Oven Roasting Bag

1 Jar Robert Rothschild Blackberry Chipotle Oven & Grill Sauce

Preheat oven to 200. Place brisket in oven roasting bag. Cover brisket with Oven & Grill Sauce. Fill empty Sauce jar with water and add to oven roasting bag. Set in oven and leave to cook overnight.
